Foodie Friday ~ Whole30 Friendly Slow Cooker Lemon Herb Chicken

Since I am on my own whole30 diet challenge I thought it would only be right to share a great recipe I have found to satisfy your hunger while being easy and delicious. Healthy food challenges do not have to be miserable but instead exciting and enjoyable! Lemon Herb Chicken (makes about 4 servings)


  1. 5-6 chicken thighs or breasts

  2. 2 cups sliced mushrooms

  3. 2 zucchini, diced

  4. 1 onion, diced

  5. Juice of 2 lemons

  6. Lemon zest of 2 lemons

  7. 1 tsp dried thyme

  8. 1 tsp dried parsley (or 1 Tbs fresh)

  9. 2 cloves garlic, chopped

  10. ½ tsp black pepper

  11. 2 cups chicken or vegetable broth

  12. 16 oz string beans, trimmed


  1. Add the zucchini, onions and mushrooms to the slow cooker.

  2. Mix the broth, lemon juice, garlic and spices in a small bowl.

  3. Place chicken on top of vegetables in the slow cooker and pour the liquid mixture over the chicken.

  4. Cover and cook on LOW for 8 hours.

  5. In a saucepan, steam string beans until tender, about 6 mins. Serve string beans on the side.
