Lemon Herb Chicken (makes about 4 servings)
5-6 chicken thighs or breasts
2 cups sliced mushrooms
2 zucchini, diced
1 onion, diced
Juice of 2 lemons
Lemon zest of 2 lemons
1 tsp dried thyme
1 tsp dried parsley (or 1 Tbs fresh)
2 cloves garlic, chopped
½ tsp black pepper
2 cups chicken or vegetable broth
16 oz string beans, trimmed
Add the zucchini, onions and mushrooms to the slow cooker.
Mix the broth, lemon juice, garlic and spices in a small bowl.
Place chicken on top of vegetables in the slow cooker and pour the liquid mixture over the chicken.
Cover and cook on LOW for 8 hours.
In a saucepan, steam string beans until tender, about 6 mins. Serve string beans on the side.
