Foodie Friday ~ Barley Mushroom Soup

Try out this incredibly simple mushroom barley soup recipe. It is the most simple a recipe can get—and also the most delicious! Bringing together seasonal vegetables and wonderful ingredients, this mushroom barley soup is a perfect dinner, appetizer or snack.

Mushroom Barley Soup


  1. 2 tsp. butter

  2. 6 sprigs fresh thyme

  3. 1 lb. mushrooms, sliced

  4. 2 garlic cloves, minced

  5. 1 small onion, chopped

  6. 2 large carrots, chopped

  7. 2 celery stalks, chopped

  8. salt

  9. black pepper

  10. ½ barley

  11. 32 oz. vegetable broth

  12. ¼ fresh parsley, chopped


  1. In a large pot melt butter. Add thyme and mushroom and cook until edges turn golden, 2-3 minutes.

  2. Add garlic, onion, carrots, and celery and season with 1 tsp. salt and ½ tsp. black pepper. Cook 10 minutes.

  3. Add barley and broth and bring to a boil, then reduce heat and simmer 25 minutes. Serve with parsley.
